Yam
Potato with Bacon
(Difficulty: Very easy)
(Cooking time: 40 minutes)
This is
a hardy side dish for any kind of meat or fish entrée. Slab bacon is better than packaged bacon
which has normally too much of fat for this recipe. Pancetta can be also used for a different
flavor.
One yam
potato about 1 pound peeled and diced
1
teaspoon of vegetable oil
3 thick
slices of slab bacon
One
medium size onion diced
1 stick
of cinnamon
A pinch
of salt
Sauté
the bacon in a pan to render fat. Add
onion to bacon and sauté for a few more minutes until softened. Add yam potato and pour water to cover barely
enough. Put a lid and cook over medium
low heat until tender (about 15 to 20 minutes).
Add salt if needed.
Serves 2-4
